Billy, it was nice meeting with you and learning about your ideas for preserving foods. I did hear back from [name withheld] and he indicated he is willing to visit with you about freeze dryers and the process. You may want to also check out items like meat analogs-there are vegetarian jerky products that have long shelf life and also dried products that give flavor and texture of meats with out the rancidity and hydration issues. Also, I mentioned the pork and turkey jerky, you might want to check out the company in Kansas:

I've resolved to re-learn how to can foods this year, in conjunction with my new gardening project. We used to have day-long canning events for all the women in the family when I was growing up. I've also resolved to learn how to make jerky and dehydrate foods. If I can figure out the technology, I'll try to post some videos on my efforts.

I like this, I have been doing a good deal of research lately into food prep and this should be helpful.
